What you need:

- 3 eggs
- 1/4 cup milk
- some parsley (chopped)
- cheese (sliced)
- tomatoes (sliced)
- crusty bread to serve
Mix the eggs and milk in a bowl and season with salt and pepper. Adding some cayenne pepper or chili flakes will give it a bit of zing if that's your kind of thing. I also like to add some of the chopped parsley into the mix to freshen it up.

Heat some butter in a large fry pan on low-medium heat. Once warm (butter should be bubbling a little) you can add the omelette mix.

Once you start seeing bubbles form on top of the omelette mix you can add the cheese to one side of the pan like below:

When the cheese has melted around the edges, add the tomatoes on top.

Once the edges start rounding and thickening (as shown in pic above), you can flip one side on to the other. This can be a bit tricky so take your time and use two spatulas in you need to

Serve with freshly cut tomato, toast and parsley to garnish (and cover the burnt bits).
